This one is dead simple and tastes awesome. I'm not a big fan of buttermilk myself, but believe me, it's worth a try.

Ingredients (Please note: I mean small cups here, not coffee mugs 😉)

      • 400ml whipping cream
      • 2 cups of buttermilk
      • 4 cups of floor
      • 1 and 1/2 cup of sugar
      • 2 cups of grated coconut
      • 4 eggs
      • 1 packet of baking powder

      Directions
Mix milk, eggs, floor and baking powder and half of the sugar and put that on a buttered baking plate. Next, mix the remaining sugar and the grated coconut and put that on top of the batter on the baking plate. Put that in a pre-heated oven at 180°C / 356°F for 20 minutes.
Pour the (unwhipped) cream gently over the cake and put it into the oven again for 5 to 10 minutes. Tip: It's a good idea to punch a few wholes into the whipping cream's package and squeeze it over the cake.
