I have some Vodka, Irish Whiskey in and other as well. and if I go down the road,.. some mead... which I need to find a local source for,.. or order.ETA: and Rum

I do 5gallon batches - roughly 4KG of honey, 2 gallons of fresh (preservative free) apple juice, water to top up to 5 gallons. Add yeast from your local brew supplier (get the bucket and airlock there too). I like EC1118 champagne yeast for mead as it's capable of getting you up to nearly 20% ABV and those are some hearty and forgiving little beasties.
Google for a better recipe but that'll give you the basics.

Home made is the best I've had. I like the apple / honey mix better than proper pure mead (honey only).
